Soup!

I've been making a few soups this fall. I made a potato leek soup a few weeks ago. This weekend I made a curried butternut squash soup in the crockpot.

1 cut up butternut squash (peeled & seeded, cut into 1 inch chunks)
1 apple (peeled & seeded, cut into 1 inch chunks)
1 onion (cut into 1 inch chunks)
5 cups chicken broth, mixed with 1 teaspoon curry powder (or, to taste)
Salt and pepper

Toss it all in the crockpot for 4 hours on high or 6-8 hours on low. When done, use a stick blender to puree all, or let cool and process in the blender in three batches until smooth.

I added a little bit of milk when done because I think I didn't peel the skin deep enough and it tasted starchy.

Yum - I was just thinking that I want some Curried Cauliflower Soup with Honey. I think I'm going to do both of these over the next two weeks. It's suppose to be rainy and chilly for a while - I love soups during that kind of weather!

Wonder if honey would be good with your butternut soup?

I never thought of putting some honey in. I'll try it at lunch today (meaning I have to go steal a honey packet from the cafeteria).

I love soups because I can always take half and either freeze it, or take to a friend. I have a friend that just had a baby and I need to visit. This soup and a loaf of bread will be perfect.

Yummy! I love soup. Carlos is not a huge fan of soup and its too much trouble to make enough for just me.

Chris is not a huge soup fan, either. I always thought that was weird. Guess it's not that odd.

No honey in the cafeteria. The honey experiment will have to wait.

Tom is a huge fan of soup. Any soup. But preferably with big chunks of meat & huge hunks of pasta. I prefer a cream soup.

Curried Butternut Squash Soup sounds great! I will be sure to try this recipe, only I will probably sub some half & half for some of the broth. You know, I have never made soup in my crockpot - which now hat you mention it seems like a perfect place to make it!

I love Curried Cauliflower soup too! *high fives Tummy* Only not with honey. I never heard of honey in soup.

Last week I bought some wild rice with plans to make wild rice soup soon. It's freakishly rich but I love it so!

Honey Update!

I went to reheat my soup in the actual kitchen, as our conference room was busy. While looking for a stir stick, I ran across honey!

The honey addition is DELICIOUS! Decadent, almost. Thanks, Tummy!

I just drizzle the honey on top of the hot soup. It does something amazing to curried soups.

I think a little sprinkle of curry would be ok for you, Boo. I don't think it has an overly curry flavor, just some nice, well-rounded heat. But that's just my two cents.

Boo - I used to be that way with curry also. Which was weird because I like all the spices that is in curry.

Rob loves curry so over 18 yrs I've found a few things I like that has curry in it. Soup being one.

I can't stand it. I can't even stand to go into those stores that smell like it. I know that sounds horrible to say, but it honestly makes me just gag.
