I'm rushed, therefore it's a cheddar variety tray today. Not very imaginitive, I know. I'll include some of the hummus I made last night. Spicy & delicious.
I'm off tomorrow, so am trying to get stuff done at work. We have a grant going out (again). It's in decent shape, but there are always last minute changes that spin everything out of control.
We are camping at a beautiful State park this weekend. It's along the bluffs of the Mississippi River. We aren't camping on the bluffs (the sites are tiny, crowded and if bad weather hits, good luck), but we have spacious shaded sites below. The weather is supposed to be perfect: Low 80s and no rain. Rare for Memorial Day weekend.
On the camping menu:
Tacos
BBQ sauced, grilled chicken
Grilled pork roast
Morel mushrooms
Pudgie Pies (camper pies, whatever you want to call them)
Turkey burgers
hot dogs/brats
We tend to eat pretty well all weekend. :-)

Sounds like fun. It has been in the 90's here and so hot. We are supose to go to the lake, if Max doesn't have to work. We don't camp though. His dad has a waterfront house there. So we don't really rough it. LOL!
*sigh*
I thought I might see a bit of discussion on Top Chef, either here or on Jen's blog. Struck out on both places.
Have fun camping! Do you camp in tents and stuff, or rent cabins?
Hobo pies!!!!!!!!!!!!
Can I come? Please please please please pleaseeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeeee
There's been a lot of grilled chicken on my plate lately. Perhaps I should have one of them there pies. But, WTF is it?
I, too, am going camping along the bluffs. In LaCrosse. First time, actually. I usually head up to Iron River, WI. Tents, disc golf, and drinking by a campfire. Ahhh, I exhale just thinking about the relaxing.
Have a great weekend!
Arkie, I didn't get to watch it due to LOST going til 10 CST. I have to wait & catch it in re-run. I was able to flip to it during LOST commercials, but then storms caused our sattelite to keep blipping out on non-local channels.
I did go & peek at who won & am thrilled!
Hobo/Pudgie/Camper pies: Breezy, I swear we must explain this at least twice/year around here, don't we? I think that makes us cool & in the know. :-)
You use a pie iron:

You make grilled cheese like sandwiches over the campfire, only instead of just cheese, you fill them with all sorts of cool stuff. Pizza & ham n' cheese are my favorites.
Cool recipes:

Yes, we will be roughing it with tent & all! Hopefully Chris doesn't get too drunk & barf in the tent this year. Grossest.thing.ever.
Fastklane-we'll be at Wyalusing, so I'll look up river & wave at you!
I have no idea what this about. DOes it contain the word Hilton or even Holiday Inn? No?
*shudder at cooking on vacation*
The name Pudgie Pie makes me giggle. I better not ever tell my DH about that or I'm sure he'd call me that LOL.
Sounds like a lovely weekend Kim. However, if Chris pukes in the tent, I'd never go camping with him again. Sheesh man, get yourself outside the tent!!!
Oh, and because of you, I started watching Top Chef yesterday. They were having a marathon of all the shows when I got home from work so I spent hours watching it. Fun stuff!
Your DH, too? Chris loves to find new nicknames for me that aren't so pleasing. He heard "monkey face" used on tv, so now he calls me monkey face. He thought I'd find it endearing since I like monkeys. *rolls eyes*
Glad you liked Top Chef! Isn't Harold a cutie?
*SNORT* that he thinks monkey face would be endearing :-)
Just like my DH calling me his little Buddha. *rolls eyes*
However, he does call his sons "monkey" every so often but it's some how different coming from a dad to a son.
Oh and yes, Harold certainly is a cutie. HOwever, he drove me nutz always having that damn pencil in behind his ear. I didn't see the earlier shows so I don't know if he did that for a reason or not.
I was so glad to see Harold win. Couldn't believe Tiff tried to take credit for Dave's desserts. And when she made that comment about her back running into Harold's knife? Pfffft! What.ev.er!
*boggle* How can so many peeps not know about Hobo Pies?
mmmmmmm
Arkie! I screamed at my tv when she made that comment "Shut up you stupid bitch! It's not Harold's fault that everyone hates you!"
*snort* What must my neighbors think of me?
Have fun camping, Kim! I'm more of an indoor girl. And I had never heard of those pie things either. :)
Oh, and Kim? When you said in the Top Chef thread that you wanted a Harold poster to hang on your wall, I SO wanted to get a pic of Harold and photoshop a cheesehead thing onto him! *snort* But I don't think I have a program to do that. Heh.
*snort* I bet Harold would think my cheesiness is sexy. He IS a chef after all.
Then again, maybe I can do it. *big grin* *snort*
Sounds delicious. I flew into Minneapolis on Monday changing planes and I thought of you.
*smooch*
Just came to *smooch* the busy cooking lady.
I love camping. Tents & all. Take me with you! :(
Well... as long as my tent doesn't have vomit in it. *grin*
I've packed my bags and I'm ready to go. What time will you be here to pick me up?
Mmmmmmmm feed me.
We swam in SIL's pool for the first time this year.. it was 69 degrees cold.
Good God Coco! I don't touch water until it is 80!
